Fresh Fava Beans - Lima Beans in Oil
Foul Akhdar b'zeit

2lb (1 kg) green fava beans
1/2 cup olive oil
5 onions finely chopped
1 teaspoon salt
1/2 cup water
1 cup chopped coriander
5 garlic cloves, crushed.

Serves 5 persons

Wash, cut off the ends, string and chop the beans into medium size pieces.

Fry the onions in oil in a big skillet until light brown.

Stir in the beans and sauté for around 10 minutes.

Add the seasoning and lemon juice to the beans.

Stir in the water and allow simmering for 20 minutes or until tender.

Serve cold.

Other Variations

Fava Beans with Chick Peas

Add 1 c chick peas to foul mixture. Serve.

Fava Beans Salad
Salatat Fool


2 c cold cooked fava beans
¼ c olive oil
¼ c lemon juice
½ c medium size onion
¼ c chopped parsley
2 cloves garlic, mashed
1 t salt

Mix all ingredients together and serve.

Serves 4
