Green Thyme Salad
Salatat Za'atar Akhdar

1 cup tender green thyme leaves (broad variety)
1 onion
1/4 teaspoons salt
1/4 cup olive oil
Juice of half a lemon

Serves 3 persons

Wash the leaves well and squeeze out excess water.

Chop the onion very finely and rub with salt.

Add the lemon juice to the above mixture and stir in the leaves.

Pour the oil over the leaves and serve.
