Onion ring

Wash brains, remove skin if fresh-cover with cold water and boil brains a little with onion rings and salt. Remove skin, and, then, return to saucepan, and add lukewarm water, a slice of lemon. Simmer over low flame until tender. In a bowl, cut brains and add the olive oil, lemon juice and parsley. Put in refrigerator until you want to serve.
