Swiss chard with Black-eyed Beans
Silq bi lubia
1 cup black-eyed beans, cooked
5 garlic cloves
1 cup chopped coriander
1/2 cup olive oil
3 onions, chopped into thin slices
1/2 teaspoon salt
5 cups chopped Swiss chard, cleaned and washed
Serves 3 persons
Crush the garlic cloves and sauté in hot oil with the green coriander for 2 minutes.
Stir in the chopped Swiss chard and leave for 2 minutes over medium heat.
Add the cooked beans to the Swiss chard. Season and stir well.
Cook over the medium heat for 5 more minutes.
Fry the onion slices in a little oil until brown in color.
Serve the Swiss chard mixture garnished with the fried onions and a little lemon juice.
