Wheat in Sweet Sauce
Snooniyeh

1 cup hulled wheat
5 cups water
1 cup sugar
1/2 cup orange blossom water
1/2 cup pine nuts
1/2 cup walnuts
1/2 cup almonds, blanched, peeled, and slivered
1 cup sweet pomegranate seeds

Serves 10 persons

Pick over, wash and soak the wheat in water overnight. Drain.

Place the wheat in a pressure cooker with 5 cups of water.

Cook-covered-over medium heat until the whistle sounds. Reduce the heat and cook for an additional 1/2 hour.

Soak the walnuts in hot water. Drain and chop.

Soak the pine nuts in water.

Let the pressure cooker cool down, and then open it.

Stir in the sugar until dissolved, over gentle heat.

Remove the pot from the heat and add all the other ingredients.

Serve hot or cold.
